Fountain Sizzlers: How an Old Bombay Classic was Redesigned for a New Generation of Diners

 There are some restaurants that not only serve food, but memories as well. Fountain Sizzlers is one such restaurant. With over two decades of serving as one of Bombay's most-loved restaurants, Fountain Sizzlers brings along with it memories, warmth, and the essence of a bygone era. Therefore, when the chance to re-design their new cafe in Phoenix Palladium came along, the task was not only thrilling but also highly emotional - how to give a new and fresh look to the classics while retaining its essence?

Reinventing a Legacy, Brick by Brick

This new location meant that the shop had an unusual floor plan that was very long and L-shaped with no windows. This is quite a restrictive design for an establishment’s premises, and it would be quite challenging for the new shop.

In order to achieve such an atmosphere, the design opted for exposed ceilings, lighting, and zoning. These features ensured that the dining experience is layered rather than linear, with customers led through moods and phases.

Classic elements such as cane-backed chairs, brick walls, and fluted glass booths are incorporated in a nod to its current signature identity. On a side note, art works and antiques are used as a means to tap into nostalgia, a design strategy typical of the sophisticated design sensibilities of a celebrity interior designer.

The challenge of this 3,000 sq. ft. space was finding that perfect harmony of warm and sophisticated, vintage and contemporary. This was actually done through careful and intentional design decisions, which included patterned flooring, textured walls, and even brick accents that worked to ground the theme and also enhance the space’s modern quality.
